This weekend Maria (the roomie) decided to try out making some enchiladas.
I can’t remember the recipe she used but i know we used:
Rotisserie chicken, wraps, shredded cheese, flour, sour cream, and…more woops.

So obviously i forgot to continue taking pictures of us filling the rest of the pan (with 8 wraps) and then pouring the creamy deliciousness and adding cheese over the top. I know that it baked for about 20 minutes (at i think 375) and that it was AMAZING! Oh my gosh so good.
I will say this, my oven is possessed. =/
It is always hit or miss when you’re baking anything and it can REALLY test your patience. When the dish still had about 4 minutes left to cook you here the incessant BEEPING and there is a big ol’ F3 flashing on the screen. UGH. I honestly think it’s time to get a new oven, I’m terrified it’s going to catch on fire and then i’m screwed, but who has an extra $$$$$$$$$ laying around to just drop on an oven.
I also tried out making guacamole for the first time and i think i did a decent job, (i just used TOO much lemon). I used *1 avacado *1 tomoato *half of a half of red onion *one lemon and *salt & pepper.
I cut up avocado and attempted to mash it up with a fork (which was not easy), and then added my cut up tomatoes and onions and salt/pepper and then i squeezed an entire lemon into the mix [do not add the entire lemon, it is too much! Try using half and seeing how that taste].
I think i did a pretty decent job for my first try! 🙂

I was going to try to make these flourless zucchini brownies i had found over at Delighted Momma (i even bought all of the ingredients!)
However as previously mentioned my oven is possessed and it wouldn’t allow me to continue cooking for the night. Oh well, maybe i can try it another night this week.
