Happy Happy Friday Friends!
I’m so thankful Friday is finally here but I’d be lying if I said this was a chill weekend. Do you ever have those weeks where it seems like not only do you have a lot going on but more gets added on AND you forgot that you committed to a few things only to be reminded and have to find a way to shuffle everything around? Yeah, that’s been my life this week.
Thankfully I was off of work yesterday and was able to have a super chill day with my friend Lyndsey. We ate avocado toast, poke bowls from aldi (y’all so. good.), chatted and she got me started, and hooked, on Downton Abbey. It’s always good to get that quality friend time into our lives and schedule so I’m happy to have made that happen with multiple friends this week (lots of evening walk dates).
Question Time
Q | What’s your go to recipe right now?
OOOOOO So let me tell you – I’ve been OBSESSED with avocado toast lately. It’s basically been my lunch for the last week and I’m not even mad at it. Here’s the basic run down: Dave’s Killer Bread (pan-seared with oil/ghee, seriously GAME CHANGER), smashed avocado with lemon juice, red pepper flakes, paprika, salt, an egg, and then topping it off with this Herbs De Provence Oil. This oil is seriously the secret ingredient if you’re wanting some tasty toast! I’ve also been working through a few recipes from this awesome lady, SavoringTheFlavoring and she has SO MANY GOOD recipes full of healthy foods and tons of veggies!

Q | If you could live anywhere, where would it be and why?
This is a tough one! I guess I can really only base this off of places I’ve lived / visited before right? SOOOOO hmmm…I absolutely LOVED Maine when we lived there, there was just so much to see and do. I also really loved Scotland when I visited there and could have seen myself living that life in the city as well.
Q | What are you reading right now?
I’ve started reading “You’re The Girl For The Job” by Jess Connolly and let me tell y’all, it’s good stuff. I attended her Girls Night for Go + Tell Gals a few months ago and it was an incredible experience. After that night I knew that this book was one that would be so beneficial for me to read. Once I get through this book I plan to read a fiction series that I started a few years back and had to wait for the last book to come out so it means I need to re-read them all. It’s called Nevermore and it’s just so fun, well, from what I remember. I love myself some YA books y’all (Young adult fiction) so if you have any recent favorites I would love to hear them!
Q | Why do you love Halloween so much?
I think it comes from growing up with a birthday in October. Most of my parties were costumes and games and just lots of fun! We also watched a lot of Halloween movies / had cider / made treats during October so that definitely added to the fun. I seriously LOVE the fun and dress up of Halloween. I’m not big into spooky/gore/scary of the season – in fact I don’t like scary movies at all!

Q | Are you a morning person or a night owl?
100% a morning person. I actually have to be at work most mornings at 4:30AM and while that is TOUGH I can do it without much complaining. NOW at the same time as I’ve gotten older I find myself fighting sleep more vs when I was younger and would put myself to sleep. I am not as productive at night, in fact I would much rather just stretch, binge watch netflix, or read at night. Mornings I’m up, ready to go and to crush all the things off my list! I also clean a lot in the mornings if I’m not heading to work!
