I’m back again with a recent recipe post as everyone really loved the last one (Volume One Here). I’ve been trying to make time to meal plan more recently and when I actually make it happen it pays off with feeling creative, healthy, and accomplished in our kitchen. We are less tempted to eat out and more inclined to cook together and enjoy a meal where I know what all is in it.
That’s not to say we haven’t ordered food from some local places (because oh we have, and oh it’s so good!); but we are trying to limit ourselves to once a week if that. This stay at home order is tough stuff some days but I’m doing my best to find the good in it, and the good can be finding new recipes to try!

- This is a variation of the lentil taco salad listed below.
- Lentils
- Black Beans
- Corn
- Greens
- Squash
- Avocado
- Salsa
- Cheese
- Bitchin Sauce
- Homemade chips (from wraps!)

- Spring mix (or other salad mix)
- Sliced carrots
- Avocado
- Sliced almonds
- Plantain chips
- Tuna (mixed with avocado mayo, paprika, dill weed, salt & pepper)
- Herbs De Provence Oil (this brand is so yummy)
- White vinegar

- Eddie was actually a huge fan of this one, trust me, MAKE IT!
- I topped mine with avocado & greek yogurt (just like sour cream!)

- Wrap
- Grilled zucchini & tomatoes (I grill a lot of veggies on a grill pan if Eddie isn’t planning on grilling that night)
- Hummus
- Feta Cheese
- Kale & Spinach

- This was a little variation of a recipe I found a while ago.
- Chickpea pasta
- Sliced cucumbers
- Grilled chicken (we used already grilled pre-packaged chicken for ease on this one and we had it on hand!)
- Feta Cheese
- Broccoli micro greens
- Greek salad dressing
- Best served cold!

- Grilled pita bread
- Hummus
- Fetal cheese
- Sliced cherry tomatos
- Spinach
- Smoked salmon
- Homemade tzatziki sauce (I like this recipe) *and yes, i spelt it wrong in the photo, whoops!

- Bread (this was a rye bread and so tasty!)
- Smashed Avocado
- Sliced Almonds
- EVOO drizzeled
- Carrots + hummus

Hands down this is THE BEST recipe I’ve found while in this stay at home order. I can’t stop eating it and I am so glad I found it in the pages of my favorite current cookbook Two Peas and Their Pod. If you’re looking for a cookbook you’ll keep open all the time, get that one, you won’t be sorry. She also has a website that is incredible and I’m constantly finding more recipes to try!!

- I’m not even going to take credit for this recipe. This is a DELICIOUS chocolate chip cookie, and they are h.u.g.e. This made almost 20 cookies and we are obsessed with them. These are definitely a winner and I’ll be making them again!
