I’ve been sharing a lot of my meals on my instagram stories recently and I just had a friend ask me to put it all in a blog post so she could save them (YAY!). I’ve really been trying to incorporate more veggies into every meal and am gravitating to vegan / vegetarian meals. It’s been fun to try new things and learn more about food!
I am really feeling so good the more vegetables I’m eating. I have found that I’ve been eating more of a pescatarian diet lately (aka vegetarian and adding in fish and eggs) and I feel so much better as I try different recipes. I know that when Eddie gets home we’re going to be incorporating more meat into our diets (mainly because Eddie loves it, as do I). Our goal is to be eating cleaner versions of meats like the hunting game he will bring home and the fish he will bring home. I can’t wait to have a freezer stocked full of wild game to eat a few times a week, but not daily for me. The more I’ve been learning the more I realize our bodies really aren’t meant to process animal protein every single day and spreading it out has been really good for my body.
Below are a few of my recent eats and a little brief rundown on how I made them. I hope you enjoy them!
- Spinach & arugula
- 2 eggs
- Roasted chickpeas with tumeric
- Roasted carrots with garlic and onion powder
- 1/2 an avocado
- Everything but bagel seasoning
- Balsamic Vineagar
- Oil
- Spring mix
- Roasted squash & zucchini with paprika, onion, and garlic powder
- Roasted asparagus
- Roasted broccolli
- Guacamole packet
- White vinegar + oil
- Acai Packet
- 1/2 banana
- 1/2 cup blueberries
- 1/2 cup almond milk.
- Powdered peanut butter (I love this brand because there is no added sugar!)
// TOPPINGS // - Unsweetened shredded coconut
- Slivered almonds
- Chia Seeds
- Other 1/2 of the banana
- Pumpkin seeds
- Homemade granola (below)
- Crumbled blender bomb (find here)
- Spring mix
- Roasted carrots in any spices you love
- Roasted zucchini
- Mexican Bean Salad
– black beans
– corn
– sliced & cubed peppers
– chickpeas - 2 turkey salsa burgers (recipe here)
- Jasmine rice (or any rice!)
- Pan seared chickpeas with tumeric, garlic powder, cumin powder
- Pan seared kale, wilted, with minced garlic and salt
- 1/2 an avocado
- Tahini drizzle
* One day I also added in some greek salad dressing and it was such a surprising flavor and I loved it too!
- Toast (I’ve been loving pumpernickel lately)
- My avocado mash (SO GOOD)
– Avocado
– Throw in a fork full or two of greek yogurt
– Spices: onion, garlic, paprika - Alfalfa sprouts
- Kale microgreens
- Sliced tomatos
- Herbs De Provence Oil

- Baked sweet potato (half would have been perfect, I was just extra hungry)
- Pan seared carrots, black beans, corn in minced garlic and paprika

- Toast

– 1 banana (frozen is best)
– Hazelnut milk
– Collagen powder - TOPPINGS
– Blueberries
– Sliced almonds
– Granola
– Cinnamon
– A few chocolate chips
- Carb counter wheat wraps
- Tuna
– Mustard
– Paprika powder
– Onion powder
– Herbs De Provence oil - Spinach
- Avocado
- Chips. 🙂
- 4 Cups Oats
- Maple syrup (heavy pour)
- Coconut flakes
- Chai seeds
- Dates (chopped. I used kitchen scissors to cut up)
- Walnuts
- Slivered almonds
- Cinnamon
- Oil
- Dates
- Melted almond butter + chocolate chips
- Sprinkle of salt
So there is a little glimpse into my recent eats and I’m a creature of habit who eats a lot of the same things throughout the week once I love something. I’m trying to try one new recipe a week and test it and see if I like it enough to add into a weekly rotation.
