recently i’ve been really trying to be more healthy.
cook healthy, eat healthy, exercise healthy, and have a healthy mindset.
it is not easy.
most of the time i get sick of ground turkey and chicken and veggies; and i want to just binge on cookies, sweets, chips, and rice – and lets not forget the loafs of bread.
but i know that isn’t healthy, and it won’t be beneficial.
so when i’m really, really craving something but still in that “i have to be solid” mindset i go to this recipe. I can eat a few of these cookies without the massive guilt of “what have i done?!”. I also like making things from scratch so that i know every single thing that goes into it. (have y’all been reading food labels lately? there are some scary things added to our food)
if you’re looking for a good cookie recipe, that has zero flour in it, some good protein, and it satisfies a sweet tooth – look no further.

gluten free chocolate chip cookies.

ingredients:

+ 1 cup almond butter
+ 3/4 cup natural sweetener
+ 1 large egg (or 1 tsp flax and 3 tbsp water)
+ 1/2 teaspoon baking soda
+ 1/4 teaspoon salt
+ 3 oz dark chocolate chip pieces

how to:

+ combine first 5 ingredients & stir; add chocolate chips (stir in)
+ line baking sheets with parchment paper
+ drop rounded tablespoons of cookie mix
+ bake at 350 for 10-12 minutes.

my tips:

+ the more chocolate chips, the better.
+ if you have sea salt, use it, and don’t crush it…the little chunks of salt are awesome.
+ i cooked mine closer to the 12 minutes, they were still a little gooey putting on the cooling racks.
+ if you don’t have almond butter, you can use peanut butter – it isn’t as yummy (i tried it) but still pretty dang delicious.
+ i’ve also heard people have added protein powder, i might try that next time to add more nutrition.
+ have friends over, otherwise you will eat the entire batch like i did the first time i made them.
+ make sure you have milk on hand, these things are sweet!
